Sanji screamed “Mellorine” in a “OH MY GOD SO SWEET” context.
Mellorine is a dessert, they are substitute for ice cream.
Mellorine is a lower-cost imitation of ice cream, using fats other than butterfat. It can be made from both animal fat and vegetable fat.
Question is, why would Sanji scream mellorine on ladies? My personal headcanon says that part of him think that ladies are substitutes for the actual “dessert”.

Desserts are sweet and people are tying it with the idea of happiness. Sanji, didn’t have actual love and happiness, yearning for it. And he find a small dose of it through the beauties of women. Their beauty, gazes, and smiles brings him simple happiness he didn’t get in his life. (until he meet his actual families)
That’s why he takes women as substitute for ice cream, substitute for the main happiness.
Note that I realized Sanji screamed “Mellorine” at ladies, not for calling them as that- but more in “so sweet!” context of squealing.
I have another headcanon about his “pervertness” and “love-cook” mode, but I will save it for later because I might write too long about it and I don’t really have good wordings for it as for now. While I am against his actions of perverting in real life and all, I kinda have a reasonable idea why he does that even though it’s problematic and shit and doesn’t justify his actions. You can ask me about it, but I will probably type it out later when I am in the mood. :>
